Vietnamese Yogurt Black Sticky Rice Pudding- Sữa Chua Nếp Cẩm recipe

Ingredients
  

  • 1/2 cup black sticky rice
  • 1/8 teaspoon salt
  • 2-3 leaves of pandan (or 1 teaspoon of vanilla extract)
  • 1/4 cup honey
  • 1 1/2 cups water
  • plain yogurt (no sugar, no flavor)
  • crushed frozen (for serving, not necessary)
  • additional sugar (for serving, but not required)
  • mint leaves (for garnishing)

Instructions
 

  • Wash the rice with black sticky rice, then soak it for up to 4 to 6 hours. If it is soaked for less period of time or skipped this step, you'll require to increase cooking duration.
  • After soaking, wash rice, then put it in the pot. Make knots, then place them inside the same pan. Put in salt, water and, and bring to the point of boiling. Reduce the heat to medium-low or low heat then cover and cook for 20 minutes.
  • After 20 minutes after 20 minutes, add honey, mix and then cover the pan, cooking for 5-10 minutes more or until rice becomes soft and the pudding is as glossy and thick as you'd like it to be.
  • Transfer it to a bowl, and allow it to cool to the temperature of room. Mix yogurt until it is smooth. Place 1 cup of the black rice pudding with 2 portions yogurt into the serving glass or in bowls. The proportion of yogurt and rice pudding can be altered. Add honey and crushed ice If you wish.

Notes

I have recently come up with a method to prepare that black, sticky rice pudding inside the pressure cooker. This method is a new one it is not necessary to soak rice ahead of time.
