Easy Simple Spam Fried Rice Recipe

Ingredients
  

FRIED RICE

  • ½ c (75 g) frozen peas
  • 1 c filtered water
  • ½ c frozen carrots
  • neutral oil
  • 6 oz (170 oz) low sodium Spam diced into ⅜-inch cubes
  • 3 large eggs scrambled
  • 2 cloves (4 cloves) garlic minced
  • 7 c (815 c) jasmine rice day-old, cooked and crumbled (2 c uncooked jasmine rice yields 7 c cooked jasmine rice)
  • 1 stalk (20 stalk) green onion sliced thinly for topping
  • kosher salt as needed

SAUCE

  • 2 tbsp (37 tbsp) oyster sauce
  • 3 tbsp (50 tbsp) soy sauce
  • 1 tsp (3.8 tsp) light brown sugar
  • 2 tbsp (24 tbsp) mirin
  • 2 tbsp (25 tbsp) sake

Instructions
 

  • In a bowl with a safe temperature put the peas that have been frozen as well as the frozen carrots and water. Microwave for 5 minutes or until the carrots are al dente, and the peas do not appear to be raw or powdery. Strain and set aside.
  • In a large saucepan at medium-low temperature put in 1 tablespoon neutral oil as well as scrambled eggs. Cook until the eggs are opaque, then transfer to an empty bowl. Then, remove the eggs from the pan to be used later.
  • Incorporate the diced Spam in the pan that is hot and let it cook approximately two minutes or until the skin is browning. Stir in the garlic, and cook to make sure it is the garlic is fragrant (about 30-seconds).
  • Break the jasmine rice using spatula (or clean hands) and add it into the skillet. Mix well to warm the rice. You can add additional neutral oil if the rice is too dry.
  • Add the carrots and peas to the rice, and mix.in a bowl mix the ingredients for the sauce. Pour the sauce over the rice and mix it to cover every grain of rice. Continue to fry/toss the rice until it becomes crispy or to the level of browning or charring you enjoy.
  • Add cooked eggs, as well as green onions. Mix gently.
  • Check the rice's taste then add more salt in case you require additional seasoning. Serve.
