Súp Nui Gà recipe - Vietnamese Chinese Chicken Soup

Easy to prepare and delicious Vietnamese version of chicken noodle soup which I had as a kid growing up.

Ingredients
  

  • 4 lb (1.8 kg) of chicken bone-in preferred or 3 pounds of boneless chicken
  • 1 large yellow or white onion or 2 medium sized onions, quartered.
  • 1 tbsp sugar
  • 2 tbsp salt
  • 16 oz dried elbow macaroni
  • 1 tsp MSG (monosodium glutamate) optional

Instructions
 

  • Add chicken, onion sugar, salt and MSG in a large pot. Pour enough water over it to coverit, bring it to a boil, then reduce the heat to simmer. It should take between 10 and 15 minutes to simmer until it is finished.
  • While you boil the macaroni in another pot of water until it is al in the middle, and then remove it.
  • Examine the doneness of your chicken each time 1-2 minutes passes. The chicken should be clear in the middle and the juices running clear. Adjust the seasoning as necessary.
  • Remove the chicken and let it cool then shred it with either your fingertips or fork.
  • Mix in a bowl of macaroni along with chicken, broth as well as garnish it with cilantro pieces and the scallion. Add sambal to the top and serve!
