Cá Hồi Nướng (Vietnamese Baked Salmon Recipe)

My twist on a classic Vietnamese bake fish recipe cooked with Salmon (ca hoi nuong)! The salmon is marinated and baked, and then topped with peanuts and scallion oil. It's the perfect dinner for the family.

Ingredients
  

  • 2 lbs salmon
  • 2 cloves garlic minced
  • 1 teaspoon sesame oil
  • 1 teaspoon 1 tsp fish sauce
  • 1 Tbsp lemon juice
  • 1 tbsp soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar granulated
  • 4 Tbsp unsalted butter melt
  • 4 Tbsp vegetable oil
  • 2 tablespoons fresh green onions thinly cut
  • 2 tablespoons peanuts crushed

Instructions
 

  • Two sheets of aluminum foil onto baking sheets. The salmon should be placed on onto the top.
  • Mix the minced garlic with sesame oil citrus juice, fish sauce oyster sauce, soy sauce and granulated sugar into one bowl. Mix it all together and coat the salmon with marinade. Allow it to marinate for 15minutes.
  • Pre-heat the oven up to 425° F (218 degrees C).).
  • Spread butter melted over the salmon's top.Join both ends of the initial aluminum foil piece to cover the salmon. If you own a huge chunk of fish, then you may require a second aluminum foil.Bake covered in the oven with foil for about 15 mins.
  • In 15 minutes cover the salmon, then bring the oven to a temperature of broil. Broil it for 5 to 10 minutes or until it turns a light golden brown the top. Remove the salmon from the oven.
  • Combine green onions with vegetable oils in a pan of sauce. Cook for about 10 seconds or till the onions are bright. Sprinkle the sauce over the salmon.
  • Finally, sprinkle with peanuts, and serve.
