We've tried two methods to cook the white pearls of tapioca and the most effective method is to soak the pearls in water for a minimum of 8 hours or over night to cut down on cooking time. If you soak the pearls prior to cooking and cook them, we found that the pearls would have translucent edges but opaque center while pearls that weren't pre-soaked will require upwards of one hour of simmering before becoming totally transparent.
